Happy Earth Day!

Take this day to appreciate mother nature and everything she has given us. Appreciate her, enjoy her, and take care of her. Not just today, but every day. Every day should be Earth day.

Here are some easy tips on how to reduce your carbon footprint:
  • Reduce, REUSE, REUSE, REUSE, REUSE, REUSE and recycle! This especially goes for non-biodegradables such as plastic and Styrofoam but also for everything else. I make some homemade Jams, so I keep the store bought containers and reuse them. Then recycle. (That's not really raspberry jam, it's home-made carrot jam. Go ahead and judge, I think carrot jam is delicious!)
  • Carpool.
  • Turn off things when not in use. This goes for the lights, electronic appliances and the water faucet!
  • Plant trees, flowers, herbs. It's not just good for the environment, it's personally rewarding too.
  • Insulate your home (saves on the bills too!)

  2. Well it's very simple but not at all healthy! Maybe you can healthify it and get back to me! This is what I use:
    5 cups of grated carrots
4-5 cups of sugar (yeah, healthy!)
    2 cups of water
    about 1/3 cup rosewater
    about 1/4 cup lemon juice
(my mom also adds a little cardamom but I skip that)

bring sugar and water to a boil, then add the carrots and stir on medium heat for about a half hour (it gets thick). Add lemon juice and rosewater (and cardamom if you want)and stir for another 5 min. That's it, and it's delicious!

  3. Hmmm... sounds like a fun experiment! I have some rosewater but I haven't used it yet because I don't really know what to put it in, so this would be a good way to try it. I've been successful at cutting out sugar again (I think it's been 4.5 weeks now), so maybe I can figure out a way to make this without sugar. Most of the no-sugar added jams use fruit concentrates to increase the sweetness, so maybe I can try replacing the sugar with that. Or I could try throwing a few pureed dates in there. Thanks for the recipe!
